Gluten-Free Matcha Waffles

Something about a bright green matcha latte is just deliciously cute, but have you ever heard of a matcha waffle? Waffle mix is surprisingly quick and easy to make when you are craving something a little bit sweeter for breakfast or a midday pick-me-up. If you’re anything like me, your mini waffle maker is one of your most-prized-but-least-used kitchen gadgets. Well, it’s time to break it out and give it a whirl! This recipe is sure to put a smile on your face with its greenish tint just in time for St. Patty’s day. Not only is matcha a fun ingredient to sneak into your food and drinks for an additional pop of color, but it is also packed with nutritional benefits. You may be wondering, what exactly is matcha? This fragrant tea powder is actually made from a plant; similarly to where other tea is found, matcha comes from the Camellia sinensis plant, and is predominantly grown in two Japanese regions: Uji in Kyoto, and Nishio in the Aichi prefecture (Pureleaf). After harvested, the plant’s leaves are steamed and air dried before being pulverized into powder. Research has shown that consuming matcha can aid with cancer prevention, cardiovascular health, protection of the central nervous system, and promoting healthy skin (Capatina). According to a study conducted in 2020, the plant’s potential for preventing many diseases and supporting cognitive function means that regular consumption of matcha may have a positive effect on both physical and mental health (Kochman). It does have a very strong and distinct taste, so I would recommend trying out something like a matcha latte before committing to making these waffles. If you are missing the waffle maker, just use the batter to make pancakes instead! Hope you enjoy!

Ingredients:

  • ½ cup gluten free flour (I recommend oat or almond flour)

  • 1 tsp matcha powder

  • ¼ tsp baking powder

  • 1 tbsp coconut sugar

  • ⅓ cup oat milk 

  • 1 tsp vanilla extract

  • 1 egg

  • Strawberries or other fruit for topping 

  • Honey or maple syrup for topping

 Instructions:

  1. Preheat your waffle maker. 

  2. In a small bowl, add all of the dry ingredients and whisk to combine. 

  3. In another small bowl, add all of the wet ingredients and whisk to combine. 

  4. Add the wet ingredients into the dry ingredients and whisk until you have a thick incorporated waffle mixture. 

  5. Add small amounts to the waffle maker and cook until golden brown (my small waffle maker made 2 ½ waffles with this recipe)

  6. Top with honey or maple syrup, fruit, powdered sugar, etc. 

Make ahead and store in the fridge or freezer and reheat using a toaster.
