Spicy Salmon Rice Cakes

If you have ever scrolled through Tik Tok or Instagram, you may have come across the viral salmon and rice bowl recipe, coined by Emily Mariko. Similarly, these spicy salmon rice cakes resemble Mariko’s deconstructed salmon recipe and satisfy all of your sushi cravings in the comfort of your own home. The incorporation of salmon in this meal serves as a great source of protein and omega-3 fatty acids (Ware). The omega-3 fatty acids are a very important component, especially considering how our bodies cannot create those fats internally as they must be externally obtained from a variety of foods (Harvard). Additionally, if you prefer substituting the salmon with tuna, the benefits are equally as rewarding. Plus, the incorporation of avocado in this dish provides another rich source of healthy fats. Avocados are high in this healthy fat, , helping us feel fuller between meals while also stabilizing blood sugar levels (Ware). Avocados and rice also provide an abundance of dietary fibers that relieve constipation and regulate bodily functions (Mayo clinic). Aside from the health benefits of this unique meal, the combination of sriracha and wasabi provide a subtle kick of heat that will leave your mouth wanting more. The bite-size pieces are perfect appetizers or make a great, filling meal!
Ingredients:
Crispy Rice Cake-
2 ½ cups of cooked sushi rice
½ teaspoon of kosher salt
2 tablespoons of rice vinegar
1 tablespoon of sugar
Oil, enough to cover the pan for frying
Spicy Salmon-
8 ounces of salmon, can be substituted with ahi tuna
1-2 tablespoons of sriracha
2 tablespoons of mayonnaise
2 teaspoons of lime juice
1 teaspoon of toasted sesame oil
1 teaspoon of soy sauce
1 teaspoon of wasabi paste
Garnish-
Sliced avocado
Sliced jalapenos, pickled or fresh
Dried seaweed (nori)
Toasted sesame seeds
Instructions:
Begin by preparing the rice per the instructions on the package.
While the rice is cooking, begin making the spicy salmon mixture in a separate bowl by first dicing the salmon into small pieces.
Once the salmon is cut begin adding in the sriracha, mayo, lime juice, sesame oil, soy sauce, and wasabi paste then fold until mixed well.
After the rice has completed cooking, stir in the additional ingredients; salt, rice vinegar, and sugar.
Let the rice cool until sticky and then cut into rectangular pieces.
Bring the pan to medium heat and add oil to cover the bottom then place rice cakes into the pan and begin lightly frying until golden brown on each side.
Now we can build the rice cakes by starting with the rice as the base, adding a layer of dried seaweed (nori), spreading the salmon mixture, then garnishing it with avocado, jalapeno, and sesame seeds.
Plate and enjoy as an appetizer or a meal!
