Mango Salsa

This salsa is not your common salsa- it is versatile and refreshing! It can be used as a salsa dip with Tostitos, lime chips, or veggies. It can also be used as a topping for fish, chicken, or mixed in with shrimp. Yum! This mango  ‘salsa’ includes peppers, onions, and peaches for a fresh and sweet taste in every bite. 

Ingredients:

  • 4 ripe mangoes

  • 3 peaches

  • 1 sweet onion, small

  • 1 yellow bell pepper

  • 1 red bell pepper

  • 1 bunch of fresh cilantro

  • 3 limes

  • Salt

  • Pepper

 Instructions:

  1. Peel mangoes and chop into small pieces (dice)

  2. Place mangoes in large bowl

  3. Cut yellow and red peppers into small pieces and add to the bowl

  4. Wash cilantro thoroughly and dry by squeezing in paper towels

  5. Chop cilantro finely and add to the bowl

  6. Peel and cut the peaches into small cubes and add to the bowl

  7. Add the juice of 3 limes to the bowl

  8. Add a pinch of salt and pepper to the bowl

  9. Mix ingredients in the bowl with a large (preferably wooden) spoon

  10. Serve and ENJOY!
