3 Ingredient Peppermint Bark

Serves: 12

Prep Time: 20 minutes

As the holiday season approaches, I look for any excuse to get in the spirit. One of my favorite snacks over winter break is dark chocolate peppermint bark. While being a relatively simple recipe, it is the perfect mix between chocolate decadence and a minty kick. I solely use dark chocolate in almost all of my baking. Dark chocolate is a great source of antioxidants and fiber (Gunnars, 2018). Dark chocolate is also loaded with minerals such as iron, magnesium, and copper. Copper and iron work together to enable our body to form red blood cells (Ware, 2017). Magnesium aids performance and also can help to reduce depression symptoms (Spritzler, 2018). This bark is packed with hidden nutrients and leaves a minty fresh sensation with every bite.

Ingredients:

  • 3 cups dark chocolate

  • ½ teaspoon peppermint extract

  • ½ cup crushed candy canes

 Instructions:

  1. Add chocolate to a microwave safe bowl and melt for 45 seconds.

  2. Next, add peppermint extract and stir throughout the melted chocolate.

  3. Pour chocolate mixture onto a parchment lined baking sheet. Make sure to spread evenly with a spatula.

  4. Sprinkle chocolate mixture with crushed candy canes.

  5. Place in the fridge or freezer until hardened.

  6. Enjoy for up to two weeks!
